I cut three chicken breasts in thirds, lengthwise, brushed them with olive oil and sprinkled Sylvia's Secret seasoning on them. I put them under the broiler for 8 minutes on each side.
I boiled water to cook medium egg noodles (half a package). (Next time, I'll use rice**.)
In my wok-type skillet, I sprayed "Smart Balance" cooking spray and added a teaspoon of olive oil and a teaspoon of butter (Smart Balance). To this I added a handful each of chopped onion, celery, and green pepper and cooked it (while stirring) until the onions were clear and the peppers al-dente. Then I removed that mixture from the skillet, added another teaspoon of butter and added 12 ounces of mushrooms and some Mrs. Dash. After the mushrooms got done, I added the other mixture back into the wok and added a handful of fresh spinach, 5-6 leaves of fresh basil, and a whole tomato (coarsely chopped). I put he lid on, turned the burner down low and let the tomatoes get warm and the spinach wilt. I meant to add some white wine here, but I forgot!
When the chicken was done, I cut some into bite-sized pieces and added it to the wok full of the other stuff, while stirring. I served that over the egg noodles, which I had stirred with a bit of butter and some parsley. The reason I broiled the chicken instead of stir-frying it is that I like it to be a little crusty on the outside.
I thought it was wonderful - even without the wine - and licked the platter clean. Mr. kenju had a very hard time getting the buttered noodles onto his fork. I offered him a big spoon, but he declined. **Next time: RICE, and some low-sodium soy sauce!! Or maybe penne pasta and a bit of marinara. What do you think?

That sounds very tasty. Would cutting the noodles make them easier to lift? That said, I would actually use rice myself, but don't ask me to use chopsticks!
Mmmm sounds good! Pasta Primavera is my favorite dish though! Since you asked, YES, next time try it with Penne Pasta (buy the wheat, darker color, it's healthier). You might skip the mushrooms and try a little fresh grilled asparagus cut into about 1" pieces, and yes on the marinara--but not too much!
That and a fresh spinach salad and a glass of merlot and I'm in heaven LOL.
That sounds really yummy! Was that lot just for two of you - sounds a very big plateful. I would definitely have to add white wine, or some other liquid, as Mr. G likes his food wet - he loves gravy!
Noodles sound good, I break them up a bit as Mr. G has the same problem as Mr. Kenju! We are not great rice fans. I find penne pasta a bit heavy, I use twists, or trampolina (like taglietelle)
But what is Mrs. Dash??
I just have to get a Wok. Keep thinking I will but don't. Now I will. That sounded really good. I would stick with the noodles. "Hard to eat" would slow me down and I might eat less. Keep thinking also to get chopsticks for the same reason. Don't know why I think eating is a race.
Sound delish. Penne or shell pasta or bowties would work.

That sounds good, Judy. I've never used Sylvia's Secret seasoning so I don't know what flavor that imparts. I don't think I'd use soy sauce due to the extreme saltiness but if you're going to use rice next time I guess you're going to need to pile on extra flavor.
We make stir-frys like that all the time. I've never broiled the chicken first, though, and that sounds like a grand idea. Your recipe would be delicious over rice.

I think it sounds great.....I have a hard time with noodles too. I don't cook, so when you package this and make it microwavable, I'll be the first to buy it.
What do I think? I wish you would come cook for me. Sounds healthy and tasty.
That's my type of dinner. I could do it without the chicken and like it just as much.
