TA-DA!



I prepared my first ever chicken pot pie - almost from scratch! When Renn and Tiff were here last weekend, cooking up a storm, Renn told me to use the leftover chicken soup to make pot pie. On Saturday, I bought canned peas and a can of cream of chicken/mushroom soup, added it to chunks of leftover chicken and the vegetables that Renn had cooked in her soup (carrots, celery, onions), and then added some spice and some snipped bits of fresh parsley, and 1/2 cup chicken broth and voila! I had chicken pot pie. The soup made a very good gravy, and although it isn't as low fat as it ought to be, I decided to splurge.

I confess to using store-bought crusts, and the only thing available was the store brand. It was not quite as good as the brand I like - but it was acceptable. Mr. kenju ate it and asked for seconds, even though he started dinner with this....."This is the third day in a row I've had chicken." This low fat/low salt diet is not sitting well with him, but he has to like the results of it, which are noticeable if he looks in the mirror.



P.S. That pretty pie up there is not mine, but it was nearly like that!

That pie sounds yummy and if Mr Kenju asked for seconds despite it being chicken again then that has to be a good review!

Does Mr. Kenju like spicy things? If he does, that is one way to deal with the blandness of a heart healthy diet.

Wow. Impressive. And I've always found pastry crusts very difficult to make, so I think you were smart to buy them.

WEll, Congratulations my dear! I applaud you and admire your bravery and tenacity! Ut sounds quite scrumptious, I must say...! YUMMY!

The smoke is in the air because of the winds and because there are so very many fires....I can smell in my house....The air is terrible, but not what it would be if you were right there in it....It is quite worrisome, these fires. The conditoons are going to continue through Wednesday, they say..HEAT, WIND, LOW HUMIDITY, and everything is bone dry from no rain for almost a year, except for a tiny bit...hardly worth mentioning...! OY!

My sister makes the best chicken pot pie in the world. Whenever she visits with me, we cook a large chicken and make lots of pot pies that we freeze for later.

I can cook them too, but I'm kind of a lazy cook.

The simple meals are the best. The kids cooked sausage and mash tonight. By golly it was good:)

I am so glad that it turned out well!

I opt for store bought crusts, as I am unable to create one that stays together AND doesn't taste lie shoe leather.

You can do the same thing with the beef roast. It makes a nice change of pace.

God, that photo makes me hungry! I love pot pies. Practically lived on Banquet pot pies and top ramen as a teenager! lol Sounds absolutely yummy.

Looks good to me. I won't mind having some of that pie in my freezer.

Some nights I have a steak, bake some fish or heat up leftovers from a restaurant. The only time I really cook is when I make a big batch and freeze individual portions so I don't have to cook, just heat and eat!!

I use the store-bought crusts too. But now that I'm doing the organized starvation plan known as Weight Watchers, Chicken Pot Pie is off the list.

I'm sorry I've not been around much. I really have been praying for you regularly. (Just as the big guy. No, I don't mean Hoss.)

That looks delicious!!! And you're not alone, I use store bought crusts all the time. Mrs Smith makes some good ones.
They're a good substitute if you don't have time to bake!

How well I know the low-salt regimen, but I’ve found some creative alternatives by substituting herbs and spices. Try Herbs de Provence for meats and chicken, and Mrs. Dash’s new chipotle pepper for almost everything. Penzeys Spices (penzeys.com) has an assortment of no-salt seasonings, Golden Flake has salt-free potato chips and some health food areas have salt-free blue corn chips. Del Monte has a line of salt-free canned goods and you can even find salt-free canned mushrooms. For a quick meal, dice and sauté left-over chicken breast, mushrooms, onion, garlic, celery, any kind of pepper and seasonings of your choice in a generous portion of olive oil. Serve over rice or pasta. The ingredients flavor the oil and coats the rice or pasta like a sauce. Once you get used to the low-salt diet, highly salted foods taste terrible and send you running for water.

Ohhh that looks yummy and I'm sure the one you made was just delicious. I could tell you many stories about the change of diet that went on in our house too. We've managed to stick pretty closely to it over these four-plus years since Ed's first attack. Not easy. However, yours truly still grabs a handful of M&Ms whenever she gets to wishing for a smoke. It's showing all over my body, believe me!
