2 tablespoons olive oil
4 large cloves of garlic, slivered
1/2 cup chopped green onions/scallions
1 cup chicken stock or broth
1/4 tsp. salt
black pepper to taste
Fresh grated Parmesan cheese
Slice off the tips of the broccoli florets (to make 3 cups). Cook the oil in a two quart casserole (microwave) for two minutes at full power. Stir in the garlic and cook until golden and crisp - about three minutes. Stir in the broccoli and scallions; add the broth. Cover and cook five minutes. Rotate during cooking. Season with salt and pepper and sprinkle with Parmesan cheese.
Serves four.
Note: I omitted salt, and it didn't need it.
We are now completely out of fresh fruit and vegetables. Funny how one misses them:)

ReplyDeleteI love broccoli but Ron does not. He does like garlic however so I might try to make this and change his mind. Oh it sounds so yummy.
